Can we spend our calorie needs to the fullest?

Hello, I am 1.80 m tall and 82 kg. I am not overweight, but I think I am 5-8 kg more. I started fitness. I am trying to pay attention to what I eat. My goal is to build muscle. I found my daily calorie amount to be 2,800, and when I took 5% less, I found it to be 2,600.
The question I am wondering is this.
I eat 300 calories for breakfast
I do not eat lunch
Let's say I eat 300 calories in the evening, I don't eat anything other than that, I drink water, I drink unsweetened tea.
In total, 600 calories enter the body.
My question is, do I need to fill all 2,600 calories per day? Or do I have to hang around 600 calories a day?
Another question I have is, let's say I ate these foods, I took 600 calories a day, I still have about 2000 calories, for example, can I eat 200 calories of ice cream? After all, it does not fill the daily amount of calories.
I would be very grateful if someone with knowledge could reply.
